Our Red Velvet takes on a light and elegant rolled form. A beautifully vibrant, soft and airy red velvet sponge embraces a smooth, creamy and lightly vanilla-infused cream cheese filling. Raspberry pieces add a bright, subtly tart touch that brings the whole dessert to life. 🍓

Delicate yet indulgent, this dessert brings together the richness of the cream cheese filling and the freshness of the fruit, creating a roll that is as beautiful to look at as it is delightful to enjoy.


🌿 Ingrédients

 

For the Red Velvet Sponge

  • 5 large eggs

  • 125 g sugar

  • 100 g all-purpose flour

  • 10 g unsweetened cocoa powder

  • 10 g neutral-flavored oil

  • 1 pinch of salt

  • 1 tsp vanilla extract

  • Red food coloring

For the Cream Cheese Filling

  • 250 g Philadelphia cream cheese

  • 150 ml heavy whipping cream, 30–35% fat, very cold

  • 50 g powdered sugar

  • 1 tsp vanilla extract

For Assembly

  • Raspberries, cut into small pieces


👨🏽💬 Preparation

 

1. Prepare the Red Velvet Sponge

Preheat the oven to 350°F (180°C).

In a bowl, sift together the flour, unsweetened cocoa powder, and salt. Set aside.

In a separate bowl, combine the 10 g of oil with the red food coloring. Set aside.

In the bowl of a stand mixer or in a large mixing bowl, beat the eggs and sugar for 8–10 minutes, until the mixture is very pale, light, airy, and significantly increased in volume.

Add the vanilla extract.

Take 2–3 tablespoons of the egg-and-sugar mixture and gently fold them into the oil and food coloring mixture. This will loosen the oil and make it easier to incorporate into the sponge batter.

Gradually add the sifted flour, cocoa powder, and salt mixture to the egg-and-sugar mixture.

Using a rubber spatula, gently fold in the dry ingredients with an upward and over motion, taking care to preserve as much of the volume created by whipping the eggs as possible.

Finally, gently fold the oil, food coloring, and egg mixture into the batter using the spatula, until the batter is smooth and evenly colored.

Immediately pour the batter into a 12 × 16 × ½-inch (30 × 40 × 1 cm) sponge cake pan.

Bake at 350°F (180°C) for about 9 minutes.

The sponge should be fully baked while remaining soft and springy to the touch.


2. Roll the Sponge

Once the sponge comes out of the oven, let it rest for 3 minutes.

Then transfer it onto a clean, slightly damp kitchen towel and gently roll it up together with the towel.

Let it rest in this rolled position for at least 30 minutes.

This step allows the sponge to gradually take its shape while maintaining enough flexibility for the final roll, helping to prevent cracks.


3. Prepare the Cream Cheese Filling

In a well-chilled bowl, whip the 150 ml of very cold heavy cream until stiff peaks form. Set aside.

In a separate bowl, beat the Philadelphia cream cheese with the powdered sugar and vanilla extract until smooth and creamy.

Gently fold the whipped cream into the cream cheese mixture using a rubber spatula.

Mix until the filling is smooth, light, and firm enough to fill the roll.


4. Fill and Roll

Once the sponge has completely cooled, gently unroll it.

Spread the cream cheese filling evenly over the entire surface, leaving about ½–¾ inch (1–2 cm) of space around the edges. This small margin will help prevent the filling from spilling out as you roll the sponge.

Sprinkle the raspberry pieces evenly over the filling.

Gently roll the sponge back up, keeping it snug enough to create an even, well-shaped roll.

Wrap the roll tightly in plastic wrap.


5. Chill and Rest

Refrigerate the Red Velvet Roll for at least 2 hours.

For a firmer texture and cleaner slices, ideally let it chill for 4 hours or, even better, overnight.

This resting time also allows the filling to set and the different flavors to meld together beautifully.

Before serving, carefully remove the plastic wrap and decorate as desired.

 

✨ Tips

 

For a Light and Airy Sponge

Whipping the eggs and sugar is a crucial step. The full 8–10 minutes of whipping will create a very pale, voluminous, and airy mixture. When folding in the dry ingredients, work gently to preserve as much of this volume as possible.

 

For a Soft and Flexible Sponge

Keep a close eye on the baking time. The sponge should be fully baked while remaining soft and flexible. Overbaking can make it too dry and therefore more difficult to roll without cracking.

 

For a Light and Smooth Filling

Use very cold heavy cream and a well-chilled bowl to help the cream whip properly.

When folding the whipped cream into the Philadelphia cream cheese mixture, use gentle movements with a rubber spatula to maintain a light and airy texture.

 

For Clean, Elegant Slices

Chilling is your best friend. The more thoroughly chilled the roll is, the cleaner and neater the slices will be.

For a polished presentation, use a sharp knife and wipe the blade clean between each slice.
