Seed & Dried Fruit Bread - Gluten-Free and Incredibly Delicious! 🍞✨

 

🍞 Ingredients for 1 loaf (6 to 8 slices)


Classic Base:

150 g skyr

150 g cottage cheese or ricotta

200 g rolled oats

1 teaspoon baking powder

2 eggs


Seed & Dried Fruit Mix (70 g total):

👉 Tip: This mix adds amazing flavor and nutrients to your bread, but feel free to adjust with your favorite seeds and dried fruits based on your taste and what you have on hand !

 

Sunflower seeds: 20 g → Rich in magnesium & vitamin E, great for energy and skin.

Raisins: 14 g → Natural sugars & antioxidants for a touch of natural sweetness.

Walnuts: 11 g → Excellent for brain health, packed with omega-3s and healthy fats.

Pumpkin seeds: 10 g → High in iron, zinc & magnesium, perfect for immunity.

Pine nuts: 10 g → Provide protein & healthy fats with a slightly buttery taste.

Chia seeds: 5 g → High in fiber & omega-3s, making the bread more digestible & nutritious.

 

Vegan Option: 🌱

Replace skyr and cottage cheese with 300 g plain plant-based yogurt (soy, coconut, almond).

Replace eggs with 2 tbsp ground flaxseeds or chia seeds mixed with 6 tbsp water (let sit for 10 min).

Add a pinch of baking soda + 1 tbsp lemon juice to help with rising.

 

👩‍🍳 How to Make the Seed & Dried Fruit Bread


1️⃣ Preheat the oven to 350°F (180°C). In a large bowl, mix the skyr and cottage cheese or ricotta until smooth.

2️⃣ Add the rolled oats and baking powder, then mix well to evenly distribute the baking powder.

3️⃣ Incorporate the eggs one at a time, stirring until the batter is well combined.

4️⃣ Fold in the seed and dried fruit mix, ensuring they are evenly distributed.

5️⃣ Transfer the mixture onto a baking sheet lined with parchment paper and shape it into a round loaf.

6️⃣ Bake for about 1 hour, checking doneness with a knife (it should come out clean).

7️⃣ Let cool before slicing. You can also freeze individual slices for a quick and healthy snack all week !
