🛒 Ingredients

 

🟣 Ube Crêpes

 

  • 90 g all-purpose flour
  • 240 ml whole milk
  • 2 eggs
  • 1 level tablespoon sugar(ube is naturally sweet - no need to overdo it)
  • 30 g melted butter
  • 40–50 g ube purée or 1 to 1½ teaspoons ube extract

🍋 Mango–Passion Fruit–Lime Mascarpone Whipped Cream

  • 200 ml heavy cream (35% fat), very cold
  • 100 g mascarpone
  • 50 g sweetened condensed milk (≈ 3 tablespoons)
  • 40 g mango–passion fruit purée
  • Zest of ½ lime
  • 5–8 ml lime juice (1 to 1½ teaspoons)

 

🥭 Fruit & finishing

 

  • 1 ripe mango, sliced
  • 2 passion fruits (pulp + juice)

 

👩🍳 Method

 

1️⃣ Make the crêpes

 

Whisk all the crêpe ingredients until perfectly smooth.

Strain the batter, then refrigerate for 1 hour.


Heat a lightly greased non-stick pan.

Pour about ¼ cup of batter per crêpe to make very thin crêpes.

Cook briefly, without browning.

Let cool completely.

 

2️⃣ Prepare the mascarpone whipped cream

 

Soften the mascarpone

Whisk the mascarpone with the condensed milk until smooth.


Add the flavorings

Gently mix in the passion fruit pulp, lime zest, and lime juice.

Whip the cream

Add the cold heavy cream.

Start whisking slowly, then increase speed.

Stop as soon as soft, stable peaks form.

Lay the crêpes slightly overlapping.

Roll tightly, without pressing too hard.

 

4️⃣ Finish & rest

Refrigerate for at least 1 hour to set properly.
