  • 200 g crab meat (fresh or high-quality canned)

  • 3 eggs

  • 150 g flour

  • 1 packet of baking powder

  • 100 ml coconut milk

  • 50 ml neutral oil (sunflower, canola…)

  • 1 tbsp soy sauce

  • 1 tsp freshly grated ginger

  • 1 tsp finely chopped lemongrass

  • Zest of one lime

  • 1 small garlic clove, pressed

  • Fresh cilantro (to taste)

  • Salt & freshly ground pepper

 

🍳 Instructions 

 

  1. Preheat oven to 350°F (180°C) with fan.

  2. In a mixing bowl, combine the flour and baking powder.

  3. In a separate bowl, whisk together the eggs, coconut milk, oil, and soy sauce.

  4. Add the ginger, lemongrass, garlic, lime zest, and chopped cilantro.

  5. Pour the wet mixture into the dry ingredients and stir until smooth.

  6. Gently fold in the crab meat.

  7. Pour the batter into a greased or lined loaf pan. Bake for 35 to 40 minutes — a toothpick should come out clean.
